I LOVE this Walnut Gorgonzola and Apple Salad. I literally eat it for at least two meals a day until the gorgonzola is gone.
Its has fresh, bright flavors and is colorful and “fancy” enough to serve at any holiday dinner. PLUS, you can make it in 10 minutes flat.
Feel free to add some grilled chicken and you’ve got a great entree salad!
Walnut Gorgonzola and Apple Salad
1 large head of romaine lettuce, chopped
3 cups of arugula
1/4 cup red onions, thinly sliced
1/2 crumbled gorgonzola
1/2 cup dried cranberries
1/2 cup walnuts, roughly chopped (toasted, optional)
1 fuji or honeycrisp apple, chopped
1/3 cup extra virigin olive oil
1/4 cup balsamic vinegar
1. For the salad: Toss all items together in a large bowl.
2. For the dressing: Mix olive oil and balsamic vinegar in a small bowl. Lightly drizzle over the salad, toss to combine. Enjoy!
