Pound cake has got to be one of the easiest/fool proof cakes out there.
This pound cake is a little lighter in texture, but has that same great taste we all know and love. Add some red food coloring & fresh strawberries and you’ve got the perfect dessert to impress your Valentine. 🙂
Valentine’s Day Sour Cream Pink Pound Cake:
(Makes 1 10″ tube pan or 8-10 servings)
1/2 pound (2 sticks) butter
3 cups sugar
1 cup sour cream
1/2 teaspoon baking soda
3 cups all-purpose flour
6 large eggs
1 teaspoon vanilla
3-5 drops of red food coloring (optional)
2. In a large mixing bowl, cream the butter and sugar together. Add the sour cream and mix until incorporated.
3. In a separate bowl, sift the baking soda and flour together. Add to the creamed mixture alternating with eggs, beating each egg 1 at a time.
4. Add the vanilla and add a drop of red food coloring at a time until you reach the color you’d like. Pour the mixture into a greased and floured 10-inch tube pan. Bake for 1 hour 20 minutes or until golden brown.
5. Let the cake cool for at least 2 hours before inverting and cutting into slices. Use your favorite heart cookie cutter to cut out hearts from each slice. Top with some fresh whipped cream and strawberries and enjoy with your loved ones.
