Asparagus. One of my favorite fall/winter veggies. Asparagus soup, asparagus “fries”, grilled asparagus and of course- healthy baked asparagus are some of my favorite recipes to make.
For those nights when its too cold to grill your asparagus, this is the perfect recipe for baked asparagus.
Baking the asparagus makes the ends soft and the tips nice and crunchy- the perfect combination!
Perfect Baked Lemon Asparagus
1 bunch of asparagus
1/8 cup olive oil
fresh cracked pepper
1 lemon wedge
1. Preheat oven to 425 degrees F. Prepare the asparagus, either just by snapping off the ends, or trimming the very end and peeling tough part with vegetable peeler.
2. Place asparagus on a cookie sheet or 9×13″ baking pan. (For easy clean up, line the baking pan with foil.
3. Drizzle oil over the asparagus. Crack some pepper and salt over the top of the asparagus. Roll each piece of asparagus over and repeat.
4. Bake for 10-15 minutes or until tender. Remove from oven and squeeze 1 lemon wedge over the asparagus.
