That is how I feel about this Paleo Cherry Garcia Coconut Milk Ice Cream. My addiction to coconut milk ice cream began when I discovered Trader Joe’s Chocolate Coconut Milk Ice Cream. Boy is it heavenly. Ever since then I’ve been on the hunt to find a recipe that is as creamy and delicious as TJ’s. And boy oh boy, is this one something special!

If you love cherries, chocolate, and guilt-free, sugar-free, dairy-free, gluten-free, Paleo ice cream… then this recipe is for you.

Paleo Cherry Garcia Coconut Milk Ice Cream

Makes 1 pint


Ice Cream:
1 can full fat coconut milk (splurge and spend the extra $1 to get the best quality you can!)
1 cup frozen tart cherries, chopped
1/3 cup sweetener (coconut sugar, maple syrup, raw honey, I used Wholesome Sweetener’s Blue Agave)
1/2 teaspoon almond extract
1 teaspoon vanilla extractChocolate Shavings:
2 Tablespoons coconut oil, melted
2 Tablespoons raw cacao powder
1 Tablespoon Grade B Maple Syrup


1. Blend coconut milk, 3 cherries (for pink color), sweetener, almond extract, and vanilla in a high speed blender. Pour into ice cream maker. While mixing in the ice cream maker, make the chocolate shavings.

2. Gently melt coconut oil over low heat in a small saucepan. Stir in cacao and maple syrup until all ingredients are completely combined. Pour onto a piece of wax/parchment paper on a flat plate or baking dish. Freeze sheet of chocolate for 15 minutes, then break into small pieces.

3. When ice cream is starting to firm up, add in frozen chopped cherries. When ice cream is ready, stir in broken up pieces of the raw chocolate.

How much lemon do you need for this ice-cream recipe?

Hi Sharon,
Sorry about that. I meant to take that out of the directions. No need for lemon juice! Hope you enjoy the ice cream!
