I tell ya, I’d choose a salad over a sandwich ANY DAY. Well, as long as that salad has some sort of cheese & plenty of delicious dressing.
This salad is fresh, simple to make and has a delicious Agave Lime Dressing. Home-made salad dressings always have a much cleaner, vibrant taste- and are so much healthier!

Mexican Chopped Salad with Agave Lime Dressing
Salad (Vegetarian & Gluten-Free)
Mexican Chopped Salad:
3 cups chopped romaine lettuce
1 can (15.5 oz) black beans, rinsed and well drained
3/4 cup vine or Roma tomatoes, chopped
3/4 cup peeled jicama, chopped
3/4 cup fresh corn kernels, uncooked
1/2 cup green onions, finely chopped
1 ripe avocado, diced
1 red bell pepper, chopped (I used a yellow pepper)
1/2 cup crumbled reduced-fat feta cheese or Mexican Cotijas cheese
1/4 cup fresh lime juice
1/4 cup olive oil (I used 1 tablespoon)
2 Tablespoons Agave Nectar
2 Tablespoons finely chopped fresh cilantro
1 garlic clove, peeled and minced
1/4 teaspoon ground cumin
salt and pepper to taste
1. Chop all of the salad ingredients and place them in a large bowl.
2. Mix up the dressing with a wire whisk (salt and pepper to taste), pour over salad and toss well. Optional; top with diced cooked chicken. Enjoy!
