Gluten-Free is all the craze right now. Personally, I don’t think anyone should be completely gluten-free unless they have to be.
That being said, companies like Bob’s Red Mill have AMAZING Gluten-Free mixes that leave the gluten-free lover enjoying the same delicious desserts and food that us gluten indulgers have on the daily.
These Gluten-Free Crumb Coffee Cake Brownies are rich and chewy, topped with a buttery-brown sugar crumb coffee cake topping. Coffee Cake + Brownies … I’m in! You could maybe even pass this off as breakfast. Maybe.
Gluten-Free Crumb Coffee Cake Brownies
(makes 24 small brownies)
Bob’s Red Mill Gluten-Free Brownie Mix + ingredients on package
1 Tablespoons espresso powder
1/2 cup chopped walnuts
1/2 cup (1 stick) butter, softened
1/2 cup light brown sugar
1 1/4 cups Bob’s Red Mill Gluten-Free All Purpose Flour
1 teaspoon cinnamon
1. Preheat oven to 350 degrees F. Spray a 9×13″ pan with cooking oil spray.
2. Prepare Gluten-free baking mix according to package directions and add espresso powder and chopped walnuts to batter.
3. Pour into prepared pan.
4. Blend together softened butter, sugar, gluten-free flour and cinnamon and scatter crumb mixture over brownie batter. Bake for 25-30 minutes or bake according to package directions.
