Blueberry Mojitos

Summer is just around the corner. In fact, its nine days away! I know this, because my birthday is in nine days, meaning my birthday week starts in 7 days. (Because every birthday should be celebrated for at least a week, right?!)

These Blueberry Mojitos are a perfect, refreshing cocktail for summer. And I love the purple/blue hue the cocktail has. Any drink that is a fun color is always that much more fun to drink!

Just be sure to use good quality rum, because like Popov or any other packaged-in-a-plastic-bottle-cheap- will-give-you-the-worst-hangover alcohol, it will really make or break this cocktail.

So go ahead and treat yourself to a delicious, minty Blueberry Mojito. (You’ll get some antioxidants in there too!)

Blueberry Mojitos

 (Makes 9 cups)


Blueberry Mojitos:
2 cups fresh blueberries
½ cup superfine sugar
¼ cup fresh lemon juice
½ cup firmly packed fresh mint leaves, de-stemmed
4 cups club soda, chilled
1 cup lemon-lime soda
2 cups good quality white rum

Blueberry Mojito Garnishes:
Fresh mint leaves
Fresh Blueberries


  1. Process first three ingredients in a blender or food processor until smooth. (Yield should be about two cups).
  2. Muddle mint leaves against the bottom and sides of a large glass pitcher to release flavor. (Leaves will be bruised and torn, the more torn the are the more mint flavor will be released).
  3. Add club soda, lemon-lime soda, rum and blueberry mixture; stir to combine. Serve immediately over ice. Garnish with mint leaves and fresh blueberries if desired.

They are perfect for a sunny day and SO refreshing. I have a pitcher in the fridge just waiting for me… haha
