Banana Cupcakes with Cinnamon Honey Butter Cream Frosting!

Bananas are pretty much a miracle fruit, when it comes to baking. You put a banana into anything that is baked and its instantly moist for days! THIS is why I LOVE banana bread, banana cookies, and now… banana cupcakes.
These cupcakes aren’t heavy like banana bread. They are light, fluffy and ultra moist. The honey and cinnamon in the frosting add a nice zip!


Banana Cupcakes with Cinnamon Honey Butter Cream

Ingredients
1/2 cup butter
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cup mashed ripe bananas
1/4 cup buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
1/2 cup butter or margarine, softened
2 1/2 cups confectioners’ sugar
3 TBSP. honey
1 tsp. cinnamon
Directions
1. In a large mixing bowl, cream butter and sugar.
2. Add the eggs, vanilla, bananas and buttermilk.
3. Sift the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full.
4. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely.
5. In a small mixing bowl, cream the butter, sugar, honey and cinnamon. Frost your cupcakes (I used a French decorating tip). Enjoy!

I'm not a huge fan of banana on its own but I have to agree that in baked goods it does work miracles. I bet this cupcake tastes incredible.

Hey! I just made these! Well… sort of. I adapted them into a banana bread. It was so moist and good, and the cinnamon really gave it a kick! Thanks so much for the inspiration.

Hey Christa, I just used your recipe and altered it to be gluten free. They are amazing!!!! I used Bob’s Red Mill All purpose flour, added a teaspoon of Xanthan Gum, and an addition 1/2 tsp of salt, and just followed your directions. Honestly you would never know they are gluten free 😀 I thought you might want to share with your readers. -Crystal
